My Go-To Healthy AND Delicious Recipes

One of my favorite things to do is find recipes and healthy hacks that taste delicious but keep me on track and don't make me feel blah after indulging. These are some of my favorites, I hope you like them too!

Have a Happy 4th of July!

Shelly's Sugar-Free Lemonade:

  • 20-24oz water
  • 1/4 to 1/2 lemon, juiced
  • 15-30 drops of NuNaturals liquid stevia

Mix together and enjoy!

Festive 4th of July Cranberry Cocktail/Mocktail

  • 1 1/2 oz vodka
  • 3 oz club soda
  • 1 1/2 oz of unsweetened cranberry juice 
  • 20-40 drops of liquid stevia

Serve with fresh or frozen blueberries. For mocktail substitute more club soda for vodka. Delish!

Creamy Brown Rice Salad

Salad duty for this year's BBQ? This is not only delicious, it's easy to make!

  • 4 cups of water
  • 2 cups of brown rice (not instant)
  • 1 bunch scallions (chopped)
  • 3 red peppers (diced)
  • 2 yellow peppers (diced)
  • 2 ripe avocados (chunked)


Dressing:

  • 6 to 8 cloves of garlic minced
  • 2 heaping Tbsp of Dijon mustard
  • 1 tsp sea salt
  • 2 packets of truvia
  • 1/2 tsp pepper
  • 1/2 cup rice vinegar
  • 1/2 cup extra virgin olive oil ( I use a scant 1/2 cup)

Cook the rice for 45-50 minutes. Toss rice with dressing put in fridge for 2 hours. Add remaining ingredients and mix well.

So Delicious Dairy Free Ice Cream Bars

These are a favorite of mine. No sugar added, dairy free, chocolate dipped ice cream bars. My favorite easy ice cream go to!

Hello, I’m Shelly!

I wanted to start by introducing myself. I have been interested in health, fitness and nutrition for as long as I can remember. When I was in grade school, I remember lifting my older brother's weights in the basement and realizing how good exercising made me feel. I was more interested in reading books on nutrition than anything else. Throughout grade and high school, teachers always said that I would be an accountant because I was good with numbers and math. I always thought that was the career path I would take, until my junior year in high school. I remember sitting in an accounting class and thinking how bored I would be sitting at a desk all day. At the same time, I began to enjoy working out even more, to the point where I would get up at 4:30 in the morning and work out in my bedroom before I would go to school. And then it hit me…I wanted to be a personal trainer, not even really knowing what that meant at the time.


As soon as I decided that’s what I wanted to do, I researched the best schools and ended up attending the University of Wisconsin-La Crosse, one of the top two colleges in the nation for exercise and sport science. I graduated in 2000 with my bachelors degree in exercise and sport science with an emphasis in fitness and a concentration in strength and conditioning. I also hold seven certifications including: certified personal trainer, certified strength and conditioning specialist, functional aging specialist, balance exercise specialist, nutrition and wellness specialist, cancer exercise specialist, and corrective exercise specialist. I am always studying, researching and continuing to learn anything and everything I can about health, fitness and nutrition.


I am doing exactly what I was meant to do…and I couldn’t imagine myself doing anything else. I love working with people and helping them achieve whatever health and fitness goal they have for themselves. I am so blessed and fortunate to work with the people that I do… They are all such amazing people and friends… They are like family to me. What I do makes me feel like I have a purpose… Which in return makes me extremely happy!


If I were to describe myself I would say I am a very energetic, enthusiastic, and extremely positive person. I love to travel, am definitely a foodie, love my wine and I am the proud mother of two babies - Hammie, is a French bulldog and my little girl Gracie, a pug…they are the loves of my life…(including my husband Chad)!
